A rookery is a place where birds gather, rest, and take flight again. It is also a nod to our family name, so it felt right from the very start. We built this business on a simple belief: the best moments at a wedding happen when people are standing together with something good in their hands. That is where the conversations start and the night finds its rhythm. The trailer gives us the opportunity to share our love of gathering, the joy of celebration, and the gift of the memories that time makes.

Most wedding bar services purchase the alcohol for you and build the cost into your invoice. We work differently. As a dry hire service, you buy the beverages yourself at retail and keep every unopened bottle, which is a meaningful savings for most couples. What makes that simple is what comes with it. Every package includes a beverage consultation and a custom shopping list built around your guest count, your venue, and your taste, so you are never standing in an aisle wondering how much wine is enough. And then there is the trailer itself. Four taps, thoughtfully designed, and somehow in half the photos by the end of the night.

The essentials, done right. A fully stocked, fully staffed tap trailer for three hours of service, right sized for a rehearsal dinner, bridal luncheon, welcome party, or micro wedding. We’ll guide you through a personalized beverage consultation and send you off with a custom shopping list (you supply the drinks, we bring the trailer, the taps, and the team). Custom tap labels and a tasting card to keep. Intimate, but still an occasion.

No. The Rookery Co. operates as a dry hire service. Clients provide all beverages for their event. We provide the tap trailer, equipment, setup, service, and cleanup. We also offer a personalized beverage consultation to help curate your menu, determine quantities, and provide a shopping list along with recommended local suppliers.
Our beverage consultation is designed to help you create a menu that feels thoughtful, cohesive, and tailored to your event. We’ll guide you through selecting beverage types, building a balanced menu, and determining appropriate quantities based on your guest count and event style. With a refined understanding of wine and beverage pairing, we can also offer recommendations that complement your menu and overall event experience. You’ll receive a customized shopping list along with recommendations for local suppliers to make planning feel simple and seamless.
Our tap system is designed to accommodate a wide range of beverages, allowing each event to feel fully customized and thoughtfully curated. Clients often choose to serve: Beer, wine, Prosecco and Champagne, batched cocktails, mocktails, lemonades and specialty sodas, sparkling water, and other non alcoholic options.
We recommend booking at least 2–3 months in advance to secure your preferred date, especially during peak wedding and holiday seasons.
We serve the Dallas-Fort Worth area, and travel within the first 30 miles of our home base is included in every package. Past that, we add $2.50 per mile round trip for the additional distance. Not sure whether your venue falls inside our included radius? Just ask and we will check for you.
