We work directly with Louisiana crawfish farmers and Gulf Coast fishermen we know by name, building deep community relationships that ensure peak freshness and quality. Everything is hyper-local and sustainable, supporting Louisiana's agricultural heritage. We only serve crawfish during actual season (Jan-July), following Mother Nature's timeline. Beyond crawfish boils, we create stunning raw bars and famous chargrilled oysters. We're a boutique operation (1-500 guests) because quality matters more than scale.
